Peanut Butter & Jelly Cupcakes
1 package yellow cake mix,
plus ingredients to prepare mix
3/4 c. creamy peanut butter
1/2 c. (1 stick) butter, softened
2 c. powdered sugar
1/2 tsp. vanilla
1/4 c. milk
2 c. strawberry jelly
*preheat 350
*line cups
*prepare cake mix according to package directions.
*pour batter into cups
*bake 19-23 minutes
*beat peanut butter and butter in medium bowl 2 minutes
*add sugar and vanilla
*beat low 1 minute or until crumbly
*slowly add milk, beating low until creamy
*fill pastry bag fitted with small decorator tip with jelly
*insert tip into top of cupcake
*squeeze bag gently to fill center of cupcake with jelly (stop when you feel resistance.
*pipe or spread peanut butter frosting over cupcakes
